Food To Be Fit: Sunshine Salad
Feeling a little bummed out by the grey weather? Well - this salad is for you! It was pouring and cold (:() the other day in Toronto, and I wanted to feel happy again, so I invented this BRIGHT YELLOW salad. Safe to say I feel better...this thing is delicious! Try it out!
Ingredients:
Note: I made this a vegetarian salad, but feel free to add a protein of your choice!
Ingredients:
- Arugula (or any green mix)
- Cherry Tomatoes
- Cucumber
- Shaved Golden Beets
- Sunflower Seeds
- Balsamic Reduction

Instructions:
- Roughly shred greens.
- Cut cucumber, cherry tomatoes and grate the raw golden beets (skin removed)
- Place veggies over the greens and sprinkle with sunflower seeds.
- Drizzle with 1 tbsp balsamic reduction.
