Food To Be Fit: Sunshine Salad

Feeling a little bummed out by the grey weather? Well - this salad is for you! It was pouring and cold (:() the other day in Toronto, and I wanted to feel happy again, so I invented this BRIGHT YELLOW salad. Safe to say I feel better...this thing is delicious! Try it out!

  • Arugula (or any green mix)
  • Cherry Tomatoes
  • Cucumber
  • Shaved Golden Beets
  • Sunflower Seeds
  • Balsamic Reduction

Instructions:

  1. Roughly shred greens.
  2. Cut cucumber, cherry tomatoes and grate the raw golden beets (skin removed)
  3. Place veggies over the greens and sprinkle with sunflower seeds.
  4. Drizzle with 1 tbsp balsamic reduction.
DSC_0149 Note: I made this a vegetarian salad, but feel free to add a protein of your choice!
