Forget The Boring Ol' Sandwich! Try This Yogurt And Dill Chicken Salad Instead!

Chicken is one of the easiest, most delicious, protein sources going. But, it has the potential to get a little hum drum. Why keep eating the same chicken and vegetable dishes when you don't have to? Sometimes, we just need something that tastes a little brighter. This BodyRock Meal Plan inspired take on a traditional chicken salad recipe will have you creating lunches that are envy of all who see it. Fragrant and light, one bite and you'll never look back! Ingredients:
  • 18 ounces of boneless skinless chicken breast, poached
  • 2/3 cup Greek yogurt
  • 1/4 cup mayonnaise
  • 2 large shallots, minced
  • 1/2 cup finely chopped fresh dill
  • 1 teaspoon salt, or to taste
  • freshly ground black pepper to taste
Directions: Once chicken has cooled, shred with a fork and then chop shreds finely. Whisk together yogurt and mayonnaise. Toss with the chicken. Mix in shallots and dill. Season with salt and pepper. Spread on your favorite bread or just dig in with a fork!
