Gluten-Free/Dairy-Free No-Bake Peanut Butter Protein Balls
I'm an avid peanut butter cookie lover. And I've been seeing these protein cookies/balls all over pinterest lately. But it'll always "roll in toasted oats" or "add whey protein". And being gluten & dairy free...that's a no go.
So...I mashed together bits and pieces of recipes and came up with my own frankenstein protein balls (..?)
Whatever...here:
Ingredients
1 C Natural Peanut Butter
1/2 C Protein Powder (I used this chocolate flavoured one..but whatever you prefer)
1/4 C crushed almonds
1 tbsp dark chocolate (I used this dairy-free baking chocolate)
1 tsp vanilla extract
1 tsp maple syrup (or honey)
Additional Ingredients:
Small plate of shredded coconut
Directions:
1. Crush up your dark chocolate pieces. Also crush up your almonds (if they're still whole)
2. Mix the sh*t out of the peanut butter & protein powder. You don't want it to taste like balls of sand, so you have to really go for it. Add in the maple syrup & vanilla.
3. Slowly add in the dark chocolate and almonds. Keep mixing until it starts to appear "dry"
4. Use a big spoon to portion out your peanut butter mixture. Roll it into a ball and then coat the outside with the shredded coconut.
5. Place on parchment paper and freeze over night.
Note: These are not a treat that travels well. Once they're outside of the freezer for an hour, they'll start to melt.
