Green Bean Salad
12oz uncooked Green Beans cut in half or cut up in 1inch pieces
1 cob corn uncooked and corn cut off cob
1/4 to 1/2 red onion chopped ( to your taste, less if you do not like the flavor, more if you do.)
1 tomato chopped small
2 pieces of celery cut in half long ways and chopped
2TBL Balsalmic vinegar
1tsp sea salt
1/2tsp garlic powder
1tsp pepper
Put all ingredients into a bowl and mix, that easy!
Suggested add ins or add ons: scallions chopped, 1tsp to 1tbl olive oil. Fresh Basil chopped, or use of a white onion instead of red, or no onion but would add onion powder. You can try adding other veggies that you like. A side note, my husband is the balsalmic lover in our house, I am not unless it is in my Bruchetta ( recipe to come soon). But visiting my mom last week and always looking for new ways to spice up or veggies and eat them in a different ways, she introduced me to her Wolf Gang Puck Healthy Green Bean Salad rendition.
