Grilled Fish Tacos and Sour Cream Sauce

  IMG_9115 Ingredients Sauce; 1/4 C reduced fat sour cream 2 tbl chopped fresh cilantroIMG_9026 2 tbl lime juice 1 jalepeno pepper , seeded and chopped 1 C thinly sliced white onion, put in a medium bowl   Rub seasoning for fish, **Mix all ingredients in a small bowl and rub over fish;
  • 1 1/2 tsp paprikaIMG_9021
  • 1 1/2 tsp brown sugar
  • 1 tsp dried oregano
  • 2 tsp garlic powder
  • 1/2 tsp salt
  • 1 tsp ground cumin
  • 1/4 tsp ground red pepper  ** more if you like it spicy
  • (6-ounce) tilapia fillets or Halibut also has great flavor
Whats needed to put Tacos together;
  • (6-inch) corn tortillas ( or flour if thats your thing)
  • 1/2 ripe peeled avocado, thinly sliced
  • 1 C roughly chopped Cabbage
  • 1 tomato chopped, if you like
  • extra fresh chopped cilantro
  Directions: Combine first 4 ingredients for sauce in a food processor until smooth but not runny, pour sour cream mix over chopped onions and mix. Sauce done Next combine all rub ingredients and prepare fish. Pat fish dry and squeeze out excess water gently by pressing between paper towels. Coat with 1-2 tbl olive oil ( I used garlic and chipotle infused olive oil.) Then evenly coat with rub on both sides. Heat grill to 400 F, Grill fish approximately 4 minutes on each side. Heat corn tortillas in the microwave by placing between paper towels on a plate, 20 seconds on low should heat them through. Spread the sour cream sauce on(1tsp or so) over the tortilla, top with fish, avocado, cabbage, and any other topping. Note I left out that you can top with cheese, if you are trying to be careful with diet, the sour cream sauce is really a great flavor booster and cheese was something I chose to cut out calorie wise.  Enjoy. You can always prepare fish early in the day, make the sauce when you get home after work, or the night before! IMG_9031
