Healthy BBQ Recipes: Grilled Watermelon Salad
Finding healthy BBQ recipes is a project in itself, let alone actually having to whip it up on your grill. Now this healthy BBQ recipes may be a little different than most, but we hope you will give it a try and let us know what you think.
Why not throw this hot and juicy pink number on the grill next time you fire up the BBQ? We know watermelon is traditionally enjoyed eaten in large wedges and dripping down our chins, but it’s always good to spice things up a bit by trying something new. We saw this recipe on the Food Network and had to give it a go - so glad we did!
This salad is surprising, healthy, delicious and totally unique.
Here’s how you make it:
Ingredients (Serves 4) ½ an average sized watermelon ¼ cup balsamic vinegar extra-virgin olive oil to taste sea salt to taste 2 cups fresh greens (try mixed greens!) 1 cup crumbled goat cheese fresh pepper to taste 1 thinly sliced red onionDirections
Slice your watermelon into squares, about 3’’ x 3’’, and 1’’ thick. Pour vinegar into a saucepan and bring it to a simmer over medium-high heat until reduced to a syrup consistency. Set this aside. Drizzle watermelon with just enough olive oil to thinly coat, then place on hot grill pan over stove or BBQ on the lowest indirect heat setting. Grill each side 2 minutes or until grill marks appear. Transfer the watermelon to a plate and season with salt. Place ½ cup of your mixed greens on your plates, and then top it with a piece of your grilled watermelon, some onion and your goat cheese.
