Sinfully Delicious Healthy Flour-Free Brownie Recipe

There are few things in this world more satisfying that biting into a moist, fudgy brownie! While chocolate brownies don't generally fit into our clean eating habits, the following recipe removes the flour and adds zucchini, making it a slightly less sinful option for your cheat day treat! Here's everything you need to know to make these brownies yourself: Ingredients:
  • 1 cup purred zucchini
  • 6 tbsp butter, melted
  • 2 tbsp coconut oil, melted
  • 1 large egg
  • 1/2 cup coconut sugar
  • 1 tbsp pure vanilla extract
  • 3/4 cups organic peanut flour
  • 1/3 cup unsweetened cocoa powder
  • 1 tsp baking powder
  • 1/4 tsp sea salt
  • 4 squares dark chocolate, cut into pieces
  1. Preheat oven to 170°C/350°F. Line 8x8" baking pan with parchment paper or lightly grease. Set aside.
  2. In a medium bowl, whisk together zucchini, butter, oil, egg, sugar, and vanilla until well combined.
  3. Add the dry ingredients. Folding the mixture slowly until well combined. The batter will be thick but it shouldn't be dry. If it is too dry, add a little water.
  4. Fold in half of the chocolate chunks.
  5. Pour batter into pan. Sprinkle remaining chocolate chunks on top.
  6. Bake for 30 minutes or until brownies spring back up when touched.
  7. Allow to cool completely, then cut into squares. Chill to semi-set.
  8. Brownies last 3-4 days with refrigeration.
