Busy moms and dads, listen up. These homemade chicken nuggets are where it's at! Nuggets are a kid favorite, but admit it, you love them too! These are baked so you can feel free to enjoy them without the guilt you feel after eating fried food. They are so easy that I make them often and the girls love them! I like to put them on a salad or dip them in hot sauce. They are quick & easy to prepare and are a healthier alternative to fast food or frozen nuggets. I would say that's a win-win for the whole family! Homemade Chicken Nuggets 1 cup oat flour 1 tbsp cornmeal 1 tbsp coconut flour 1 tsp onion powder 1 tsp garlic powder 2 eggs 3 chicken breasts, cut into small chunks pinch of salt & pepper 1. Preheat oven to 425 degrees and lightly spray baking sheets with non stick cooking spray and set aside. 2. In a small bowl, whisk together the eggs with a splash of water. Cut chicken pieces into small 2 inch chunks and place them into the egg mixture and let sit. 3. Combine all of the dry ingredients in a separate bowl. 4. Working in batches, remove the chicken pieces from the egg mixture and coat with the dry mixture, pressing lightly to adhere. Place coated chicken on prepared baking sheets. 5. Bake chicken until cooked through, approximately 12-15 minutes, flipping halfway through. Serve with dipping sauce of your choice.
