Healthy Spaghetti and Meatball Alternative

  Craving pasta? Who doesn't love a plate of pasta with home made sauce and meatballs? Talk about your perfect comfort food!   Mike and I are Italian and grew up eating pasta, so there is no doubt that we will crave it from time to time. Instead of loading up on starchy carbs and feeling the bloat after eating your pasta noodles, try this healthy, gluten free, low carb recipe to satisfy your pasta craving!   Spaghetti Squash 1 spaghetti squash cut in half Place your squash face down on your pan (lined with parchment paper) and bake for 40 min at 400, then turn over to have your squash face up and bake for another 5 mins And your spaghetti squash is done!!! It's that easy!! Just fork out onto your plate, season with salt and pepper (I always use Himalayan pink salt) and add your favourite sauce. In this video my mom and niece came down to visit and made turkey meat balls and I made a simple tomato sauce. (neither following a recipe)   Turkey meatballs
  1. Preheat the oven to 350 degrees F (175 degrees C).
  2. In a medium bowl, using your hands, mix together 1 pkg X-lean (free-from) ground turkey, 1 egg, 2 small shallots (or 1 large - sometimes they're huge), 3 cloves of garlic and 1/3 cup gluten free Italian seasoned bread crumbs - If you can't find gluten free breadcrumbs, I use gluten free croutons and crush them up myself OR try using cooked quinoa (in place of bread crumbs, and add Italian seasoning). Form the meat into golf ball sized meatballs. Place about 1 inch apart in a hot baking dish. Press down to flatten the bottom just slightly.
  3. Bake for 15-20 minutes in the preheated oven, then turn them over, and continue baking for about 5 more minutes, or until somewhat crispy on the outside. Serve with spaghetti squash and sauce or however you'd like
  Simple tomato sauce In a food processor - finely chop 2 small shallots 3-4 garlic cloves (I love garlic.. so only add 2 if you're not a huge garlic lover like me) and half of a red bell pepper. Drizzle medium sized sauce pot with avocado oil (avocado oil can heat up to 500 degrees without burning.. olive oil WILL burn at a high heat!!) add the shallots, garlic and red pepper... don't let the garlic burn! (use low-med heat) Then add a 28 oz can of crushed tomatoes.. Let that simmer add salt and pepper to taste and fresh basil leaves chopped up :) Add the meatballs to the sauce and enjoy with your spaghetti squash!! (I always add a sprinkle of REAL Parmesan cheese (not the kind that comes in a container)   Sorry about the "not so exact" ingredient list in this recipe, as I don't usually use recipes when I cook... I cook by taste. If I follow a recipe, I use it more as a guide.. I hope this recipe is easy to follow and you enjoy the result!
