Summer time means hitting the beach and/or pool in our swimsuits! I have been invited to numerous pool parties and want to indulge in a refreshing cocktail, but don’t want to lose my bikini body by doing so.
This summer I have decided to take this matter into my own hands and create my own refreshing, healthy summer cocktails. First up I went to the local market and checked out what organic produce they had that is currently in season.
Peaches, nectarines and other stone fruits are in season during summer so I decided to base my cocktail around those. I picked up a couple nectarines, limes, mint and ginger. My mind was racing with delighted joy at the cocktail I was about to create.
The last few months I have been on tequila kick so I decided to use Reposado tequila in my cocktail, but if you don’t like tequila feel free to use whatever your liquor of choice is. Vodka will also go perfectly in this cocktail.
I named this cocktail “Summer Breeze” & here is the recipe...
You will need:
¼ of a very juicy nectarine or peach
Juice from two limes (small)
6 mint leaves
2 small slices of ginger
1 ½ oz (1 shot) tequila (or other liquor of choice)
1. Start by placing your nectarine, mint, ginger and lime juice into a
shaker and muddle. If you don’t have a shaker use a pint glass.
2. Add tequila and about ½ cup ice and shake your mixture.
3. Fill Collins glass with ½ cup ice and pour mixture into the glass,
make sure you get all the muddled fruit and mint into your glass.
4. Top with sparkling water (soda water), garnish with a slice of
lime, a sprig of mint or a slice of nectarine.
5. Drink and enjoy.
This cocktail is super healthy because it doesn’t have any added sugar - only the natural sugar from the nectarine. It doesn’t need any additional sugar if you get a juicy, ripe nectarines. Should you feel like you need a little more sweetness to counteract the sour of the lime,
juice add a teaspoon of honey or agave to your mixture when preparing it.
This cocktail is refreshing on a hot summer’s day and only has tequila, soda water, lime juice and fresh produce that you would be enjoying anyway - so you won’t feel guilty indulging in one or two or possibly three (please drink responsibly). So, at your next pool party, bring a pitcher of the “Summer Breeze” and get your cocktail on and skip the sides of sugar and guilt!
