If you are anything like me, you are constantly looking for innovative, easy AND tasty ways to eat clean and satisfy your palate. Competing in fitness over the last several years has definitely brought out the 'jacked Martha' in me! Breakfast is by far my most favourite meal of the day- and good thing as it's the most important! My all-time favourite breakfast is the protein pancake. There are countless variations of protein pancake recipes out there; the following recipe is one of the first I learned near the start of my fitness journey. They very protein-rich: perfect for those high-intensity workout days! The recipe yields 1-2 servings (2 pancakes), depending on your appetite. You may store/freeze the other pancake. They are a crowd pleaser-everyone I have ever made these for can't believe they're good for you. Enjoy!
2 egg whites (approx. 1/4 cup)
1 whole egg
1 scoop Magnum Nutraceuticals Quattro Protein Powder in Vanilla Ice Cream (or your fave vanilla protein)
1/3 cup low fat cottage cheese
2 tbsp ground flax seed
1/2 cup quick oats
1 tsp vanilla extract
Cinnamon, nutmeg to taste (optional)
- Preheat a non-stick pan/griddle on medium heat.
-Blend all ingredients in a blender: batter will be quite thick. Blend until smooth.
- Pour batter into pan/griddle. Flip when batter begins to bubble
- Enjoy! Top with your favourite nut butter and/or syrup (optional)
