Italian Turkey Meatballs with Zucchini Noodles

photo (3)photophoto (2)   photo (4)   This is one of my favorite healthy hearty meal I have ever made.  My mother-in-law Jamie will shred zucchini like this and use a bit of ground beef and Italian tomatoes with garlic. I tweaked it a tad. I will make this again and again. If you have children that love Italian food but aren't into veggies... Its a great way to get them to eat something green!  Hope you enjoy! Ground Turkey Meatballs- In my ground turkey I mixed Italian Seasonings with 1 egg white. Make into balls Cook them in the oven or in a cast iron skillet. Noodles- Use your carrot peeler and shred your zucchini Sauce- I use canned tomatoes, mushrooms, Italian seasoning, black olives, salt, pepper. In my blender I blend up the tomatoes and seasoning. Then cook together the sauce, mushrooms and black olives. Add your sauce to the meatballs then throw on your zucchini just for a few min. If you cook to long your zucchini will get mushy. Very Very quick and simple meal.
