Lean Chicken Meatballs

Hi Lisa, I wanted to share with you my delicious dinner. Homemade lean chicken meatballs slow cooked in tomato juice on a bead of spinach with a side of homemade 5 bean salad. Delicious!

. Chicken Meatballs Ingredients: . 1 pack Lean Ground Chicken, 1/2 onion diced, 1 celery stalk diced, 2 tbsp parsley, 1/3 cup whole wheat bread crumbs (or wheat bran), 1 tsp cumin, 1 tsp onion powder, 1 tsp cracked black pepper, 1 tsp garlic powder, 2 tbsp oregano . Cooking Instructions: . Mix it up, make balls and brown in a pan then place in an oven safe dish, cover with half a can of Tomato juice and a bay leaf. Bake 250 for 2 hours. (I have also made with ground turkey and also a mix of both turkey and chicken - make them big make or make them small, they are great snacks even without the sauce - I also love them cold and with diced apple in them as it adds a little sweetness ). . 5 Bean Salad Ingredients: . Black Beans, White Kidney beans, chickpeas, green beans, wax beans, 1 celery stalk diced, 1/2 onion minced, 2 tbsp parsley, 1 tbsp cracked black pepper, 1/3 cup apple cider vinegar, 1/3 vegetable oil, 1 tbsp light mayo, 1 tbsp yellow mustard, 1 tbsp lemon juice, . Cooking Instructions:  . Mix the above together and marinate over night. Add any additional spice as per your taste. Both meatballs and bean salad would go great with some quinoa but is great over spinach as the spinach softens to a great texture. Enjoy! . Send your recipes to share to - lisa.marie.brtv@gmail.com
