Light & Healthy Stir Fry Recipe
Autumn is here, days are getting colder & our bodies hungrier for warm comfort foods.
What better way to get a heart warming dish that is healthy and delicious like this Stir Fry Recipe.
It's filled with Vitamins, Antioxidants, Minerals, Nutrients and even Protein. It's a perfect meal for anyone working out as hard as we are.

Chicken Vegetable Stir Fry:
Ingredients for 2:
2 Skinless Chicken Breasts
1/2 Broccoli Head
Handful Mushrooms (your choice), Sliced
2 Cloves Garlic
1 Tbsp. Fresh Ginger
3 Tbsp. Extra Virgin Olive Oil
3 Tbsp. Low-Sodium Soy Sauce
S&P to taste
Instructions:
Start by slicing your Chicken Breasts into thin strips & set aside.
Slice the Broccoli into small florets & set aside.
Mince Garlic & Ginger. Grab your Wok, place over medium heat add 2 tbsp. of E.V.O oil allow to heat and add 1/2 the Garlic & Ginger, cook until golden. Add your chicken, cook until white for about 6 minutes stirring occasionally. Place Chicken in a dish and return wok to heat.
Add remaining E.V.O. oil, Garlic & Ginger once golden add Broccoli and stir continuously until incorporated thoroughly. Add Mushrooms cook for 4 minutes. Now add the cooked Chicken, season with Soy Sauce, S&P, mix well and delicately so you don't damage the veggies.
Cook 3 more minutes, turn off and serve.
You can either eat it alone or accompanied by a side of Quinoa or Brown Rice. You Choose. Ciao
