Lightened Up Chicken Salad Sandwich
There’s nothing better to be than a good deli sandwich. The problem with a great deli sandwich is all the calories! I think we’ve all learned a long time ago that just because something taste good, does not mean it’s good for you!
My favorite sandwich of all time is a chicken salad sandwich, only problem when ordering it while you’re out and about is it’s jam packed with mayo. There is just no benefit to having mayo!
I came across with recipe that doesn’t only taste good, but subbing the mayo from a traditional chicken salad mix with nonfat Greek Yogurt can cut the calories in half. Serve your salad on top of a toasted wheat English muffin or better yet a bed of lettuce for a light yet satisfying lunch.
Ingredients:
2 large boneless, skinless chicken breasts, poached
1/4 cup nonfat Greek yogurt
1/3 cup celery, diced
1/3 cup apple, diced
1/3 cup grapes, halved
1/4 cup slivered almonds
Directions:
- Dice poached chicken breasts and place in a large bowl. Mix in Greek yogurt until all the chicken is coated evenly.
- Add celery, apple, grapes, and almonds to the bowl and mix in.
- Enjoy immediately; store remaining chicken salad in fridge.
