Make This Now: Stuffed Avocado

Sometimes it's hard to get creative in the kitchen. We  all get cozy with our go-to list and often don't see outside our regular grocery store pin ball routine. But it's important to switch things up and ensure we are providing the right amount of macronutrients to appropriately fuel our body, speed up recovery, manage our weight and optimize our systems. And let's be honest, how many chicken breasts can one person really eat? No matter how rigorous your fitness calendar might be and regardless of your intentions for weight loss or weight management, your focus at meal time should be on healthy fats and protein with a big dose of veggies. (Yes, veggies are technically missing from this recipe, but I trust you will serve it up with a side salad - right?)  

Ingredients

1 ripe medium-sized avocado 2 eggs (preferably pastured - look for the sales!)

Directions

  1. Preheat oven to 350
  2. Slice avocado horizontally and remove pit
  3. Dig out some of the flesh around the hole where the pit was located to create a trough for your egg
  4. Position avocado to rest against a baking dish with high sides (I use a loaf pan)
  5. Crack an egg in each side of the avocado
  6. Sprinkle with salt and pepper
  7. Bake for 15 minutes or until egg is fully cooked
  8. Share if you are nice
  Not only is this extremely simple, it's incredibly delicious and oh-so-filling. High protein and fats

A word about Monounsaturated Fats (MUFAs)

Research continues to show diets that include MUFAs offer the most health benefits.
