Mean 3 Bean Chilli
This Vegetarian Chilli is jam packed with protein and iron and is wonderful on a “chilly” winter’s eve.
Some nutritional benefits to eating this chilli include (but not limited to)
Chilli powder: Vitamin A, Antioxidant, Detoxifier
Garlic: Vitamin B6, Vitamin C, Fiber
Lentils: Fiber Star, Cholesterol lowering, Protein
Navy Beans: Fiber, Protein, Magnesium
Black Beans: Fiber, Folate, Protein, Antioxidant
This is a no measure kind of recipe so use the following as a baseline and add/subtract as you see fit:
Roughly chop the following to make a classic Mari poise (which is just a fancy word for chopped carrots, onions and celery)
3 large peeled carrots
3 celery stalks
3 medium onions
Add these ingredients to a large sauce pot with EV Olive oil at the bottom (add a good pinch of salt & pepper)
To this add chunks of chopped up garlic – one whole bulb
1 table spoon of Chilli Powder
1 table spoon of Paprika
Once this is well on its way to being soft add in
1 – 796 ml can of Tomatoes
1 – 369 ml can of Tomato paste
1 – 540 ml can of Navy Beans
1 – 540 ml can of Lentils
1 – 540 ml can of Black beans
2 Cups of water + - (depends on how thick you like your chilli) add 1 cup and go from there
Cover and simmer for at least 2 hours (even better the next day)
This dish is so versatile: Eat on its own with a dollop of sour cream or use this chilli in a wrap with some cheese, use on nachos and cheese, eat with a piece of toast and a fried egg for breakfast! Enjoy Featured Image: Food Network
