Mini Egg and Cheese Quinoa Cups
This is a quick and easy make ahead breakfast that packs a protein punch. These are also great for freezing and heating up later.
Ingredients:
I substituted red onion for green onion, which has a bit of a stronger taste. You could also add in whatever else you like to the mix, such as some grated zucchini or diced peppers, or for those non-vegetarians out there, I’m sure some diced ham would be a tasty addition.

- 2 cups cooked quinoa
- 2 eggs
- 2 egg whites
- 1 cup grated cheese
- ¼ cup parsley, chopped
- ¼ cup green onions, sliced
- dash of pepper
- Mix together all ingredients.
- Scoop into greased mini muffin tins and bake at 350F for 15-20 minutes
