Mini Egg and Cheese Quinoa Cups

This is a quick and easy make ahead breakfast that packs a protein punch. These are also great for freezing and heating up later. Ingredients:
  • 2 cups cooked quinoa
  • 2 eggs
  • 2 egg whites
  • 1 cup grated cheese
  • ¼ cup parsley, chopped
  • ¼ cup green onions, sliced
  • dash of pepper
  1. Mix together all ingredients.
  2. Scoop into greased mini muffin tins and bake at 350F for 15-20 minutes
quinoacups I substituted red onion for green onion, which has a bit of a stronger taste. You could also add in whatever else you like to the mix, such as some grated zucchini or diced peppers, or for those non-vegetarians out there, I’m sure some diced ham would be a tasty addition.   Image source:
