Not Big On Sweet In The Morning? Try This Loaded Oatmeal & Lentil Bowl

Not everyone loves a sweet breakfast and not everyone loves eggs. If this sounds like you, this easy to prepare, savory, breakfast will become a fast favorite. While eggs do pack an incredible protein punch, they aren't the only way to get the job done. The red lentils in this recipe will give you the protein you need to feel satisfied, energized, and ready to take on your day! Inspired by the BodyRock Meal Plan, dish is simple and versatile, allowing you to top your bowl anyway you wish. Add in a little salsa, hummus or avocado and you've got yourself a healthy, balanced breakfast. Play with spices and toppings. Let your imagination run wild! Ingredients:
  • 1/3 cup rolled oats
  • 1/4 red lentils
  • 1 1/2 to 1 3/4 cups vegetable broth
  • 1 small clove garlic, minced (optional)
  • 1 small shallot, chopped, or 2 to 3 tablespoons chopped onion (optional)
  • fine grain sea salt and freshly ground black pepper, to taste
Optional Toppings: sliced avocado salsa chopped green onion hummus whole grain crackers Directions: In a medium saucepan, combine the oats, lentils, broth, garlic (if using), and shallot (if using). Bring mixture to a low boil over medium-high heat, then reduce the heat to medium-low and simmer, uncovered, for 8 to 12 minutes, or until thickened. Season with salt and pepper, to taste. Spoon oatmeal into a bowl, add your desired toppings and dig in! This recipe makes 2 servings. Leftovers will keep in the fridge for 2 to 3 days. To reheat, combine oatmeal and a splash of vegetable broth in a small saucepan and heat over medium-low heat until warm.
