Try this quick and easy stir-fry for a zesty addition to your daily diet. Its super healthy, but it’s also a family favourite, so don’t shy away from sharing this delicious dish.
Orange Ginger Shrimp Stir Fry (4 servings)
1 pound shrimp, peeled and deveined
1 medium orange, juices squeezed into small bowl 1 teaspoon garlic, minced
1 teaspoon minced ginger root
salt to taste
pepper to taste
2 – 1 tablespoon olive oil
1 tablespoon sesame oil
1 green bell pepper, diced
1 yellow summer squash, cut into 1/4-inch slices
1 cup chopped broccoli
1/2 cup diced onion
1/2 cup chopped carrot 1 medium orange, zested
1/4 teaspoon cayenne pepper
Mix the shrimp, orange juice, garlic, and ginger together in bowl and then season with salt and pepper. Put in the fridge for about 15 minutes.
While the shrimp marinates in the fridge, heat a tablespoon olive oil and sesame oil in a large skillet over medium-high heat. Once heated, add shrimp marinade mix to skillet and cook until the shrimp becomes opaque. Put shrimp on a plate.
Again, heat a 1 tablespoon of olive oil in the same skillet. Add the bell pepper, squash, broccoli, onion, carrot, orange zest, and cayenne pepper. You want to cook it until the vegetables are all tender. This should take about 5 minutes. Add the shrimp mix back to the skillet and cook ingredients together for one minute. Plate the stir fry and serve.
