Paleo Almond Coconut Granola

This recipe is crunchy, delicious and it totally grain-free, unlike every other granola recipe out there. It is loaded with the goodness of the following nutrient powerhouses: Almonds: contain the most fibre — about three grams per ounce — compared to other nuts, and are richest in vitamin E, a powerful antioxidant and a great source of protein. Walnuts: are especially high in precious omega-3 fats! Walnuts are also a rich source of monounsaturated fat, an important fat necessary in improving cardiovascular health and optimizing brain function. Coconut Oil: unlike other fats, coconut oil contains medium chain fatty acids, are easier to digest, not readily stored as fat. Instead they are quickly converted to energy, balance blood sugar AND have powerful anti-microbial properties. Cinnamon: while technically not sweet, cinnamon boost satiety and mimic sweetness, which allows you to cut back on sugar! One teaspoon of cinnamon packs as much antioxidant potency as a half cup of blueberries, and cinnamon’s natural antimicrobial properties have been shown to fight strains of E. coli, as well as Candida yeast.   Paleo Almond Coconut Granola Ingredients: 1 ½ cup sliced almonds 1 ½ cup unsweetened coconut flakes 1 cup walnuts, finely chopped 1 cup dried cranberries or raisins 1/3 cup coconut oil, melted 1/3 cup coconut nectar 2 tsp cinnamon pinch of sea salt Preparation: Combine almonds, coconut flakes, nuts and fruit in a bowl. Whisk together oil, nectar, and cinnamon. Pour oil and nectar mixture over nuts and fruit and mix. Spread onto a single layer on lightly oiled baking sheet. Bake for an hour 275 degrees, stirring every 15 minutes to prevent burning. Enjoy this delicious granola on it own as a snack, on top of organic yogurt and berries or on a superfood smoothie bowl.
