Paleo Blackberry Cobbler

It's officially springtime and my favorite dessert to make for the family is fresh blackberry cobbler. Blackberries are an amazing source of antioxidants, Vitamin C, & fiber-great excuse for a dessert, right? Right! I would love to share with you my recipe for my "skinny" blackberry cobbler. Keep in mind that if you are not a blackberry lover, you can generally substitute for any type of fruit-peaches, blueberries, you name it! Ingredients:
  • 2 cups fresh blackberries
  • 4 eggs
  • 1 cup almond milk
  • 1 cup almond flour
  • 1 cup coconut palm sugar
  • 1/2 cup coconut oil, melted
  1. Preheat oven to 350 degrees.
  2. Combine sugar, flour, oil, eggs and milk into a bowl and whisk thoroughly.
  3. Pour mixture into a greased dish.
  4. Top blackberries over the mixture and place dish into the oven
  5. Bake for 25 minutes.
