Panko Crusted Peaches

1 peach 1 C panko crumbs ( you can toast them if you choose) mix with 1 tsp cinnamon 1 C white whole wheat flour, mix with 1 tsp cinnamon and dash of nutmeg 1 egg and 1/2tsp vanilla whisked lightly together Slice Peaches into 1/2" thick slices, skin on or off is your choice I did it both ways and it was good either way. IMG_8111 Preheat  oven to 375 F degrees and line a baking sheet with foil. With tongs place each slice of peach into the flour, then the egg mixture, and then the panko crumbs. Let the excess shake or drip off before dipping in the next mixture and before placing on the cookie sheet. Place the slices on the foil. Bake 10 minutes  flip the slices and bake another 10 minutes.
