Peach Pie Popsicles

Peaches and summer go together like peanut butter and jam, so as the summer comes to a close, here is one last awesome peach recipe to beat the heat. Ingredients:
  • 4 peaches, pitted
  • ½ cup (plus 4 tsp.) soy or almond milk
  • dash of salt
  • 6 graham crackers (or slightly less than 1/2 cup graham cracker crumbs)

  1. Blend together the peaches, ½ cup of milk, and salt until smooth. Pour into popsicle molds leaving room for the graham crackers and let freeze for a few hours.
  2. Blend graham crackers until fine, then add 4 tsp. milk and continue to blend until soft. Pack graham cracker mix on top of peach mix in popsicle mold and freeze for another hour or so.
So very easy to make, and nice and refreshing. You could probably even leave out the graham cracker layer if you’d prefer, which would make this recipe EVEN EASIER.   Photo from http://www.teacher-chef.com
