Peanut Butter Banana Chocolate Chip Cookies
I made these cookies a few months back and stupidly didn’t write down the recipe, in the hope that the webpage would still be there, right where I pinned it. Well, OF COURSE, when I go back to my Food board and follow the link it now brings me to a “page not found” screen. Ugh. So I attempted to recreate the recipe from memory (as in made it up).
Ingredients:
It took a bit of trial and error (forgetting to sweeten them somehow, one batch that didn’t rise at all, one batch that was perfect on the outside but almost raw on the inside) but I’m very happy with the final recipe. I’d love to know if anyone makes any other additions or substitutions.
- 2 bananas
- ½ cup apple sauce
- 1 tsp vanilla extract
- ¼ cup peanut butter
- ¼ cup molasses
- 2 cups oats
- 2 tsp baking powder
- 1 tsp cinnamon
- handful of chocolate chips, coconut, and/or nuts
- Mash the bananas, then add all other wet ingredients and mix thoroughly
- Add in the oats and baking powder and stir, toss in the chocolate chips and any additional toppings last
- Scoop onto a cookie tray and bake for 15-25 minutes at 375F
