Persian Beet & Yogurt Salad

This delightful and healthy Persian beet recipe is a super delicious, super easy, super quick and refreshing side dish. It’s bright colour also makes it look as divine as it tastes. The beet in this recipe provides you with a great liver cleanse, and the yogurt can help with your digestive tract. Recommendation: This Persian delight tastes wonderful served with fresh baked bread or placed on top of brown Basmati rice.

Here’s what you’ll need (Serves 4 people):

2 medium beets 2 cups plain yogurt (use non-fat Greek for more protein) 1 teaspoon agave nectar (or any natural and sweet alternative. The original recipe calls for sugar.)


1) Steam the beets for about 45 minutes or until they are tender. 2) Place beets in ice water for 10 minutes and then peel and grate them. 3) Mix the beets with the yogurt and agave nectar. Cool in the fridge for about an hour prior to serving.

A Savoury Alternative:

Leave the agave nectar out and add dill and cucumber.
