Pre-Workout Fuel: Almond Joy Overnight Oats Recipe

If you have read any of my posts, you know I'm not a big breakfast eater. But on the days I am gearing up for a very primal and intense BodyRock workout or headed to Amenzone Fitness (think tires, sledgehammers and more push-ups than I ever thought possible), I know my body is going to benefit from fueling up in preparation of all that is about to go down. Truth be told though, I am all about convenience when it comes to pre-workout fuel and breakfast for my daughters. There is no apron in use, and the stovetop gets to sleep in. The regular offerings in my house consist of protein smoothies with lots of kale and spinach, an apple & nut butter, one minute mug cakes made with ground flax or coconut flour, or this new darling of a recipe for overnight oats. If you haven't tried making overnight oats yet, you are in for a treat. Stock up on mason jars or reuse glass containers and make a few days worth in less than 10 minutes. So easy!

Almond Joy Overnight Oats

fridge oats

4 oz coconut, vanilla or plain yogurt*

2 tablespoons almonds, chopped

1/3 cup rolled oats

1 tablespoon cacao nibs

2 tablespoons unsweetened coconut

1/4 cup unsweetened vanilla almond milk

  *I love Noosa yogurt, so I use half of one eight ounce container. Be sure to watch your sugars and try and limit it to a max of 14g. Combine all ingredients and stir to blend.
