Quick and Easy Breakfast

I do my workouts in the morning, and when I have done a particularly challenging workout, I love having a quick and easy meal, that is also healthy and nutritious, already prepared in the mornings. Eggs have become a staple breakfast food for me, because they are so quick and versatile. My husband is a roll out of bed, and run out the door kind of person. Having a quick bowl of cereal when he gets to work, which just doesn't cut it when he is doing strenuous work, so I also like to have something for him to grab on the way out the door. These easy baked eggs can be prepared in a large batch and stored in the fridge. They tend to go fast in my house. Often I prepare a large batch, and my children will have just finished eating a meal, but they somehow find more room in their bellies for these! I like to a sauté some veggies to serve on the side, or to top them on a bed of greens, but they are also great for grabbing as you run out the door.
