Raw Pad Thai with Kelp Noodles

This is a great alternative for conventional Pad Thai which is commonly greasy, fried, fatty and, let's be honest...not that healthy. This recipe is a great simple alternative, easy to prepare, and low fat! It is made with kelp noodles, which are 100% raw, wheat free, gluten free and fat free! Kelp noodles are a sea vegetable which are low in carbs, fat free and contain calcium and iron. Their neutral taste makes them easy to work with for many dishes, and there is literally no prep work involved! All you need to do is rinse the noodles, then cut them to your desired length for your meal. You can buy them in the refrigerated section of your local health food store, usually in the section close to the gluten free products. Now that we have bit more info as to what kelp noodles are, let's make some raw Pad Thai! For the noodle dish, you will need: - About 3/4 package of raw kelp noodles, separated and cut a bit (make sure to rinse them first!) - 2 handfuls spinach - 1/2 to 1 cup broccoli - 1 red pepper, sliced lengthwise - 1/2 cup sliced mushrooms, any variety you choose - 1/2 cup diced tomatoes or sliced cherry or grape tomatoes - 2 tbsp. hemp seeds (optional) For the sauce, you will need: - 2 to 3 zucchinis - 1/4 cup pine nuts - 2 small garlic cloves - 1/2 yellow pepper - 1/4 of an onion - 2 tbsp. nutritional yeast - 2 tsp sesame seeds - 1 tsp paprika - 1 tsp turmeric - juice of 1/2 lemon - handful of basil Optional: If you want to omit the nuts to have this be a nut-free dish, substitute 1/2 an avocado for the pinenuts and sesame seeds. It comes out great! Step 1: Throw all the ingredients for the sauce into your high-powered blender. Pulse/blend until smooth and creamy: [caption id="" align="alignnone" width="300"]2013-06-01_19-11-17_924 This sauce smells amazing! A lemony, zesty, fresh Pad Thai sauce[/caption] Set to the side so that we can pour it onto our noodle mix later. Step 2: Put the noodles and vegetables all together in a large bowl, and mix together: [caption id="" align="alignnone" width="300"]2013-06-01_19-11-39_782 You can add in the mushrooms, spinach, hemp seeds and noodles first[/caption]   [caption id="" align="alignnone" width="301"]2013-06-06_12-07-29_584 Then mix in the tomatoes, broccoli and red peppers[/caption] Step 3: Next, pour the Pad Thai sauce over the noodle bowl, and mix together thoroughly. Serve it on a plate, top with more sauce, sesame seeds and red pepper flakes. That's it, you are done! So simple, delicious and easy to make. Enjoy!
