Red Velvet Chocolate Protein Bars

This recipe is originally from Sprint 2 The Table blog, and it’s the cocoa cardio – cocoa with beet extract - which gives it the red velvet taste and red appearance. For my version I just used regular old cocoa powder, and made a few adjustments, and it turned out very well, although I definitely want to try this cocoa cardio stuff – curious to know if anyone has, and their opinions on it! Ingredients:
  • ¼ cup vanilla or chocolate protein powder
  • 3 Tbsp. coconut flour
  • 2 Tbsp. almond flour
  • 2 Tbsp. Cocoa Cardio (or cocoa powder)
  • ½ cup almond milk
  • 1 tsp vanilla extract
  • ¼ cup dark chocolate chips
  • 1 tsp coconut oil
redvelvetproteinbars2 Directions: 1. In a medium bowl, mix together the dry ingredients. 2. Add in the milk and vanilla and stir - if the mixture is too liquidy add in a bit more coconut flour, you want to be able to roll the dough into shapes. 3. Shape the batter into balls, and squish down into bar shape. Place them on parchment paper in the fridge to harden for  few minutes. 4. While the bars are hardening, melt the chocolate chips and coconut oil on the stove top, and stir to combine. 5. Dip the bars into the chocolate, turning them to coat entirely, then returning them to the parchment paper. Refrigerate for an hour, then let soften to enjoy!   Featured Image Source:
