A Salad that Men Will Request

My husband frequently asks me to make this salad for dinner, no joke.  "I feel healthy eating it," he says.  The beautiful part is that it's really easy.  Preparation can be simplified with pre-cut/shredded veggies and roasted turkey breast from the market. Ingredients per 1 salad (not really measured...I eyeball salad portions). Since this is a dinner salad, I serve it in a large bowl.
  • about 3-4 cups tender salad greens (baby lettuce mix) or whatever mix of lettuce you like (fill your bowl about 1/2-2/3 way)
  • shredded carrots (1-2 pinches...about 1/4 cup)
  • green onions, chopped (about 1/4 cup)
  • 1/2 celery rib per serving, diced
  • 1/2 small apple, diced
  • 1-2 Tbsp dried cranberries
  • 1-2 Tbsp toasted pecans, roughly chopped
  • diced cooked turkey breast (or chicken): portion should equal the size of your palm
  • 1 Tbsp olive oil
  • 1 Tbsp balsamic vinegar
Dump everything but the olive oil & vinegar in a bowl.  Whisk the oil and vinegar together & pour over the salad.  Toss to coat. Suggestions When our blackberry bushes are producing fruit, I use blackberries instead of cranberries. Try chicken, pears, and walnuts instead of turkey, apples, and pecans. A lemon herb vinaigrette goes well with the salad as well. IMG_2945 Enjoy!
