Seared Tuna Spring Rolls
These are a delicious and quick way to get some protein and veggies into your daily diet! I used fresh seared Ahi tuna, but you can use chicken, shrimp, even tofu, or whatever you like!
They were super easy to make! Here is what you need:
-Spring Roll wrappers (usually found in "foreign" food isle)
-Lettuce (i used butter lettuce)
-Carrots
-3/4 inch think Ahi Tuna seasoned & seared lightly in a pan on each side for about 2 minutes
-cucumbers
-zucchini
-Pea shoots (optional- but i love them!)

1. First you need to julliane cut or "shave" the cucumber, zucchini, and carrot into thin strips. I used a julliane zester. You can also hand cut 2. Cut the tuna into thin long strips, about 1/2 diameter 3. lightly wet the spring roll wrappers using water- i used a glazing brush & it worked perfectly 4. Layer the lettuce, tuna, and veggies on top (in the middle of the spring roll) 5. Curl the ends first (you can see i didn't do that on the first one-- takes some practice!!) the lightly roll ** You want to roll it fairly quickly before the wrapper gets to sticky! ** Takes some practice but it was actually a lot of fun to make! Not to mention the hubby loved it! =) ** Give it a go!
