Skinny Granola

Who doesn't love a bowl of granola to start the day out right? Granola is the perfect breakfast, as eating it with either yoghurt or milk gives you protein, healthy fats, and plenty of carbs. Add a banana into the mix, and you have the perfect 300 to 400 calorie breakfast! To make this awesome granola--the creation of my beautiful wife--is surprisingly easy. Enjoy!

Ingredients

  • 3 cups of oats
  • 1 cup of shredded coconut
  • ½ cup of coconut oil
  • ½ cup of maple syrup
  • Dried fruits and nuts as desired

Preparation

In a mixing bowl, combine the oats and shredded coconut. Add in a few nuts to make it a healthy breakfast, and stir together. Pour in the coconut oil and maple syrup, and stir to mix well. Pour the mixed granola into a baking tray, and put the tray in the oven to cook at 350 F. After about 20 minutes of cooking time, remove the tray from the oven and stir the granola. You should smell the granola when it's ready. Add in dried fruits while the granola is still hot.
