Almond Crunch Protein Bars

Protein bars are always better when they’re made from scratch, and these are easy to make, no-bake, and delicious. Ingredients:
  • 1/3 cup coconut oil
  • 1/3 cup almond or peanut butter
  • ½ cup plain almond milk
  • 1 cup vanilla protein powder
  • 2/3 cup almond meal
Topping:
  • 2 tbsp chocolate chips
  • 1 tbsp coconut oil
  • 3 tbsp almonds, finely chopped

  1. In a medium bowl melt peanut butter, coconut oil, and milk in microwave, stirring to combine. Add in the protein powder and almond meal, and mix well.
  2. Press the mixture firmly into an 8x8 baking dish lined with parchment paper.
  3. Melt chocolate chips and coconut oil in a small dish, mixing together until smooth. Pour mixture into baking dish, coating the protein powder mixture, then sprinkle with chopped almonds.
  4. Freeze for 20 minutes, remove from dish and cut into bars. Refrigerate in airtight container to store.
