#skinnyrecipe Quinoa Nut Butter Power Bar

I was looking to use up some quinoa and coconut milk in my fridge, AND I’m always in need of a good grab and go breakfast or snack, so power bars were the first thing to come to mind. Ingredients:
  • ½ cup medjool dates, chopped
  • ½ cup almonds
  • ½ cup cooked quinoa
  • 2 tbsp. chia seeds
  • 2 tbsp. sunflower seeds
  • ½ cup nut butter
  • 1 scoop vanilla protein powder
  • ½ cup coconut milk
  • ¼ cup maple syrup (or honey, or agave)
  • ½ cup coconut/nuts/fruit/seeds/whatever
  • 2 tbsp. dark chocolate for drizzle (optional)
Directions:
  1. Add dates and almonds to a food processor, blend until well chopped.
  2. Add seeds, protein powder, and quinoa to dates and almonds in food processor, continue to blend until meal forms.
  3. In a separate bowl combine nut butter, coconut milk, and maple syrup.
  4. Add in meal and mix until dough forms.
  5. Transfer to pan and bake at 350F for 25-35 minutes.
  6. Drizzle melted chocolate over cooked bars (optional). Let cool, then cut into bars.
quinoanutbar5   quinoanutbar3 This are pretty simple, and versatile, add whatever you like to it, and leave out what you don’t. I used almond butter because I feel like I’ve been eating a lot of peanut butter lately, I also added in coconut and walnuts to the final mix.
