Roasted Sea Salt Edamame
Edamame is a great source of protein, but in this recipe it’s also a great way to satisfy a savoury snack craving.

If you’re using frozen edamame beans, you can definitely cook from frozen, but it helps to thaw them for a while, or at least run them under warm water and pat dry before tossing with oil and spices. If your taste buds are feeling more adventurous you can kick it up a notch with other spice variations, maybe chili powder and garlic, or some savoury Italian spices.
- 2 cups frozen edamame beans
- 2 tsp. olive oil
- 1 tsp. sea salt
- ½ tsp. cracked pepper

- In a medium sized bowl, toss the edamame with the olive oil, sea salt, and cracked pepper.
- On an oven pan spread the edamame out in a single layer and roast for 30-40 minutes at 375F, stirring every ten minutes. Don’t worry if you hear a whistling sound, it’s just steam escaping the beans.
