Avocado Baked Eggs
This is a perfect breakfast (or small lunch) as it contains plenty of protein and healthy fats...and it tastes amazing!
Ingredients
1 avocado
2 small eggs
Method
Preheat the oven to 375F
Slice the avocados in half (length-ways) and remove the pit
Scoop out approx. 2 tablespoons of flesh from the centre of the avocado halves so that there is enough room for the eggs to fit
Place the avocado halves in a small baking dish ensuring that they fit snug enough to not roll around
Crack an egg and separate the white into a cup, then put the yolk into the avocado half
Gradually scoop some of the egg white from the cup into the avocado half with a spoon until it is almost full, then repeat the process with the other egg and avocado half
Place into the oven and leave to bake for 15-25 minutes (depending on the speed of your oven), once they are ready to eat the egg whites will no longer be translucent, they will be fully white
