Healthy Haystacks
The original recipe comes from a church-fundraising cookbook, printed back in 1982 called Simply Divine. Yes, my family never throws away anything. As you can see from the picture, the recipe is well-loved.
That is the recipe I based this on, but since it’s basically consisting of sugar and fat (thus the deliciousness) I went hog-wild with healthy substitutions.
Ingredients:
Wet:
- 1 cup coconut oil
- ½ cup coconut milk
- ¼ cup agave (or maple syrup, honey, whatever)
- 3 tbsp cocoa
- 1 tsp vanilla
Dry:
- ½ cup quinoa
- 1 cup oats
- ½ cup coconut
Instructions:


- Mix wet ingredients together in a saucepan, bring to boil.
- Mix dry ingredients together.
- Pour the hot mixture onto the dry ingredients and mix.
- Scoop into balls onto a cookie sheet, allow to cool, about an hour.
