Slow Cooker Sweet Potato Lentil Soup

  Whether you are single or feeding an army of children, the slow cooker is a lifesaver! You can prep all of the ingredients the night before, pop them in on your way out the door in the morning and viola! You come home to a perfectly cooked meal. Its so easy and the best part is lots of left over’s! This hearty winter soup is perfect for after a long day at work!    Sweet Potato and Lentil Soup raw sweet potatoes Ingredients: 1 large sweet potato, peeled and diced small 3 medium carrots 3 stalks, celery 2 leeks, white and green parts only 3/4 cup dried lentils, red or yellow are great but she used green 6 cups of water 1 tsp grated ginger 1 tsp curry paste salt and pepper to taste 2 cloves of garlic, diced 1 tbsp lemon juice to finish it off diced cilantro or parsley for the top Preparation: Option 1: Place all ingredients in the slow cooker and leave it for 8 hours, undisturbed. Option 2: Starting with the garlic, leeks and celery saute in a big soup pot. Once they have softened some, add the curry paste and ginger then the sweet potato, carrots and lentils. Add the water and let it simmer for about 35 minutes on medium heat. At this point taste it, add salt and pepper to suit your taste buds and cook the soup until the sweet potato and carrots are tender. When it is cooked to perfection, puree half the soup and recombine them.
