The Smiley Face Pancake for Kids and Adults Alike

Having a hard time trying to get your kids eat healthy? I know I do. Here is one of my favorite recipes because it is so versatile. You can make it a half a dozen different ways to include some healthy foods that your kiddo will eat (and it is pretty yummy for adults too)! It’s been said that sneaking healthy food into other foods is not a way to teach kids to eat healthy. I get that.  But some days I’ll take it any way I can get it! If you are a parent, you know exactly what I mean. Sometimes you need a short cut. And if it means getting some extra nutrients into my little girls’ bodies, I’m all for it. I call this one the Smiley Face pancake. You need ½ cup of oats (not instant) – blend into a flour, or just use oat flour. 1 medium organic egg 1 small frozen over-ripe banana Dash of cinnamon 1/3 cup of apple sauce (you could also use other pureed veggies or fruits here. A good one is sweet potato and it makes the pancakes orange which is kind of fun for the kids). 1 TBSP nut butter – peanut butter, almond butter, sunbutter for those with nut allergies, etc Then something to make the smiley face – chocolate chips, raisins, blueberries, etc Start by making the oats into oat flour in your blender. Add the cinnamon, egg, peanut butter and banana (make sure the banana is a bit softened). Blend until smooth. Pour into a pan and fry it in either coconut oil or grassfed butter – great healthy fats for kids as well as adults. Flip it over to cook the other side and make your smiley face! Now add your blueberries, bananas, chocolate chips , raisins, etc. You can add strawberries or sliced kiwi to make petals for your pancake to make it look like a smiley face flower. Tip - If you find that your purees make the pancake a bit runny, you can try adding in a little coconut flour – it’s extremely absorbent.
