I admit I have a sweet tooth AND I love chocolate. I love chocolate pudding, but don't indulge in it much after reading the the ingredients and how much sugar most recipes have. I have looked around and tried recipe after recipe and never found one that REALLY tasted amazing AND was somewhat guilt free, until now! I found this one in a Train for Her Magazine. I will say when I took out all the ingredients to prep, my 5 year old daughter said it sounded 'disgusting' that I would blend 1/2 an avocado with cocoa and cherries. But, after I made it, she tasted it and it wasn't long until she wanted to 'lick the bowl clean'. A sign of success!! I will say, when selecting an avocado, MAKE SURE it isn't TOO ripe. You don't want that too ripe flavor taste coming through the cocoa. Other than that, this is a delicious recipe. Be creative too! Maybe add finely chopped pecans, almonds or pair with your favorite fruit like bananas or strawberries, for added decadence! INGREDIENTS 1/2 cup avocado (organic if available) 1/2 cup frozen cherries ( I used frozen black cherries) 1/4 cup water 1 tbsp cocoa powder 1 tsp vanilla 1 packet of stevia or truvia Blend all ingredients and enjoy!
