Sneaky Meat-Free Proteins #8: Seitan

Seitan is a food that the gluten sensitive MUST avoid, for it's made entirely from gluten. However, for those who can handle gluten no problem, it's one of the best meat-free protein sources around! For every serving of seitan, you get about 20 grams of protein. That's only a little bit less than you get from a 3-ounce salmon fillet! Not bad for a wheat-based protein, right?   [caption id="" align="aligncenter" width="599"] Source: recipegreat.com[/caption] Seitan offers some health benefits, such as: A safe source of protein -- Shrimp and fish are exposed to heavy metals, livestock are exposed to hormones and pesticides, but seitan is a fairly clean, non-toxic source of protein. Doesn't taste bad -- The flavor of seitan is pretty mild, and it has a texture much easier to handle than tofu. If you're looking for a vegan protein, this could be the one for you. Note: Seitan can trigger gluten allergies, so be VERY careful when eating it. If you notice any downsides, it's best to be safe and avoid eating it--instead switch to other non-meat protein sources like tofu.
