Spelt Flour Burger Buns

I’d never thought about making homemade burger buns, but these are waaaaay better than the packaged enriched white flour buns you find at the store. Plus, spelt flour is my new go-to baking flour, it’s not entirely gluten-free but it does have lower levels of gluten and I find I feel less heavy and bloaty with spelt flour products. Ingredients:
  • 1 tbsp yeast
  • 3.5 cups spelt flour
  • 1 cup warm water
  • 1/3 cup oil
  • 1 egg (+1 for topping)
  • ¼ cup cane sugar
  • 1 tsp salt
  • sesame seeds
  1. Dissolve the yeast in the water for 7 minutes
  2. Add in the sugar and oil and let sit for 3 minutes
  3. Add 1 egg, flour, and salt. Mix in and knead until dough forms, about 3 minutes, let rise for 5 minutes.
  4. Shape them into balls, placing them on a tray lined with parchment paper, pat them down slightly and cover, letting them sit for 10-15 minutes.
  5. Beat an egg and brush it over the top of the buns, sprinkling sesame seeds on top.
  6. Bake at 400F for 10-15 minutes

If you did want to try making a completely gluten-free version, I would suggest using buckwheat flour, although I’m not sure how well they’ll stay together or rise – maybe that’ll be my next baking challenge to myself. You could also use whatever seeds you like as a topping, sunflower or pumpkin seeds might be a nice change.
