Spice Up Your Breakfast: Chickpea flour flat-bread
Starting your day off with a healthy breakfast is a crucial step in staying on track with fitness goals. However, trying to think of creative ways to spice up your morning routine can be difficult and often quick delicious recipes are high in fat or carbs, and lack protein. But fear not it is possible to make a delicious and healthy breakfast without spending all of your morning cooking.
Chickpea Flour Flat-bread w/ Egg & Sauteed Veg
Prep time: ~7minutes
Cooking times: ~10 minutes
Ingredients
Flat-bread
- 1/2 cup Red Mill Garbanzo Bean Flour
- 1/2 cup water
- 2 eggs
- 1 tbsp feta cheese
- 1/2 roma tomato
- 1/6 zucchini
- spices as desired (I used rosemary & garlic, and a mix of rosemary, garlic, oregano, basil and parsley)
- 2bsp EV olive oil
- Chop 1/2 tomato and 1/6 zucchini into bite size pieces
- Add into heated pan over medium/high with 1/2 tbsp EVO
- Add desired spices (rosemary, garlic, oregano, basil and parsley)
- Cook until zucchini begins to to crisp, remove from pan

- In a bowl whisk together 1/2 cup flour and 1/2 cup room temperature water (should resemble pancake batter)
- Add in spices and mix
- Pour into heated pan over medium heat with 1tbsp EVO (pour in like a large pancake)
- Whisk together 2 eggs in a bowl
- Pour into same pan used to cook veggies adding in 1/2tbsp EVO if needed
- Stir to create scrambled eggs
- When halfway cooked add in feta cheese
- When flat-bread is fully cooked (will be a very light golden/brown color) carefully remove and place on plate
- Reheat veggies if needed and place on top of flatbread
- Add eggs on top of veggies and season to taste
