Spicy Lentil Burgers

Ingredients

  • 2.5 cups cooked lentils
  • 1 small onion, diced
  • 1 egg, beaten
  • 1/2 bell pepper, diced
  • 1 jalapeno, finely diced
  • 1/8 cup oats
  • 1/3 cup mozzarella
  • 2 garlic cloves, minced
  • 1/4 cup cornmeal
  • 1.5 tsp cayenne pepper
  • 1 tsp salt
  • 1 tsp pepper
  • 1 tbsp olive oil

Directions

  1. Pulse lentils in a food processor until coarsely ground; transfer to a large mixing bowl.
  2. Mix onion, egg, bell pepper, jalapenos, and bread crumbs with the lentils; add  cheese, garlic, cayenne, salt, and pepper to the lentils and mix.
  3. Divide the mixture into four equally sized portions, roll into balls, and flatten into patties.
  4. Spread cornmeal into a wide, shallow bowl. Dredge patties in cornmeal to coat.
  5. Heat olive oil in a wide skillet over medium-high heat.
  6. Cook patties in skillet until browned, about 5 minutes per side.
