Stretch Your Dollar: Make FOUR Meals From ONE Chicken!

Rotisserie chickens found at the grocery store make wonderful, last minute, cost effective meals. Why not make your dollar go even further and stretch that same chicken into four, incredible, tasty meals? It is easier than it sounds! Chicken is a valuable lean protein source so don't let it go to waste! Your tastebuds and your bank account will thank you! Have a look: Here's what you need to know:

BBQ Chicken & Slaw Sandwich

Remove one of the breast halves from the chicken and shred the meat with a fork. In a sauce pan over medium heat, mix the chicken with a glug of your favorite barbecue sauce and stir for a minute or two -- until it is heated through. Pile everything on a whole wheat bun and top with thinly sliced red onion and coleslaw. If you'd like to spice things up a bit, add some sliced pickled jalapenos!

Quick Chicken Caesar Salad

 Tear a romaine heart into bite-size pieces. Toss in some whole wheat bread crumbs and 1 cup of chicken, chopped. In your Blendtec blender, mix a handful of grated Parmesan, 1/3 cup extra-virgin olive oil, the juice of 1 lemon, 2 garlic cloves and around 6 dashes of Worcestershire. Pour over your salad and toss. Add more to taste and toss again. Top with some more grated Parmesan and enjoy!

Thai Curry Soup

In a large sauce pan, combine a big spoonful of Thai red curry paste with 2 cups of low-sodium chicken stock, a few squirts of fish sauce, a glug of coconut milk and the juice of 1 lime. Bring liquid to a boil, then reduce to a simmer. Add a big handful of chicken, season to taste and remove from heat. Served with sliced peppers, torn mint leaves and a squiggle of sriracha.

Green Quesadilla

 Saute a handful of shredded chicken with a chopped plum tomato and enough salsa verde to coat the chicken. When the mixture is warm, scoop it onto a large whole wheat tortilla; cover with shredded Monterey Jack, add another tortilla, and heat your quesadilla in a dry skillet until the cheese has melted. Slice and top with sour cream, diced avocado, chopped cilantro, and hot sauce.
