Super Easy Superfood Soup
Attention non-chefs! Prepare to impress yourself with this hearty soup.

If you're anything like me, you don't have time to get fancy in the kitchen but still want something tasty (and healthy) to feed your spouse. I have a few go-to recipes up my sleeve to pull out on days when there's a little more time for preparation. This is one of them.
This soup is so good I must refrain from using curse words to emphasize my love for it. And it's as easy as 1-2-3!
1) Buy, gather or harvest ingredients (see list below)
2) Dump, chop and pour contents into big ol' pot
3) Boil first, then simmer
It requires a short shopping list since you're bound to have some of the items in your cupboard. This is a vegan-friendly version but beef it up if that's more appealing to you. Modify and substitute as you please!
Lentil Curry Soup with Kale & Quinoa
Use your big stockpot and add:
1/3 cup quinoa
2 cups lentils
10-12 cups water
2 vegan bouillon cubes
Bring to a boil while you are chopping and opening:
5 cloves garlic
1 onion
2 carrots
1 zucchini
6 ounce can tomato paste
14.5 ounce can crushed fire roasted tomatoes (or some fresh tomatoes if you have them)
1 bunch kale, chopped small
2 Tablespoons yellow curry powder
2 tsp salt (or more)
Put everything else in the pot and simmer it on your stove for about an hour. Add more water if you need to.
