Sweet Potato Home Fries

May 06, 2015 2 min read

It' hard to believe- but my first time ever trying or making sweet potatoes was when I started competing in fitness! I was 26, and I remember thinking: "how have I never had these?!" Of course with a very restrictive competition diet I had been cooking them plain. Although they are delicious and rich in flavor all on their own, I developed an easy, diet-friendly way to prepare sweet potatoes with even more 'kick'. Many argue the difference between yams vs sweet potatoes- this recipe makes either Nutritionally, sweet potatoes pack a powerful punch to match their taste: one medium sweet potato (approx 4 oz, 114 g) contains 438% of your daily Vitamin A intake, and 37% of your Vitamin C intake (http://nutritiondata.self.com/facts/vegetables-and-vegetable-products/2667/2)! And since they're a source of slower-digesting carbohydrates, they are an excellent source of pre workout fuel. Try this recipe as a side to compliment any protein source.
