Thai Fruit Salad
My man hates fruit salad but this he loves....
Serves: 6
Ingredients: 1/2 honey melon 1 mango 1 oz blueberries 1 green apple 1 tablespoon honey 1 oz palm fruit seeds 2 oz Greek yogurt (fat free) 200 ml coconut milk 4 tablespoons cream of coconut (non sugar added)
Directions:
Wash all fruits. Mix yogurt, coconut milk, coconut cream and honey in a big bowl. Peel honey melon and mango, remove the cores. Quarter the apple and remove the seeds. Cut all into bite-size pieces. Mix all fruits with dressing and let it cool for 1 hour.
Fill into bowl´s and serve up.
