The balls have ENERGY!
I won't lie to you: I'm the Inept Chef. Meaning, I love to eat and I love to bang around my big old kitchen pretending that I know what I'm doing. Sometimes I do and sometimes....well, sometimes I end up with stuff in my Afro and a big batch of inedibles. The first time I tried to make these I soaked the fruit too long and didn't use any bran flakes. Luckily for all of us, I learned my lesson. Presenting: Energy Balls!
1/4 lb organic dried figs
1/4 organic dried apricots
1 tbsp almond butter
2 tbsp coconut flakes
1 tsp cinnamon
1 cup of bran flakes
Soak the fruit for 30 mins then process all the ingredients together in a food processor. Should form on big ball in the jug. Pinch off and roll pieces into balls. Refrigerate.
